
Hey there people and Happy Sunday to you! I hope the world is treating you kindly, wherever in the world you may be.
Today I want to share with you one of my staple, go-to recipes. It's also one which My Handsome Irishman loves!! It is part of my Meals and Menus series.
Who is this Meals and Menu series written for? You guys of course! I guess though, it might be especially useful for those of you trying to cook a varied menu on a tight budget, to students who perhaps aren't all that confident when it comes to cooking, or anyone who just likes to collect new ideas for their weekly menus.
Now, let's get started shall we?
You will need:
Rice (1 1/2 cups feeds me and MHI quite nicely), 4 sausages, broccoli & spinach (or any other veg you like), Naan Breads, Spray oil. 1 jar of Curry Sauce. I buy my curry items from Lidl as they are economical enough that you don't have to feel guilty buying ready made sauces.

How-to:
1. I like to get everything ready first. The rice can be tricky if you don't keep an eye on it. So here's what to do: boil the kettle for the rice, take out the naan breads and sprinkle with water ready for the oven, heat the oven to 200 degrees C, chop up the broccoli, shake the jar of sauce, chop up the sausages into chunks. You can do those things in any order really. Once they're done, you're ready to cook!

2. Spray oil into a pan and heat up. At the same time pour over the boiling water onto the rice and stir. (Optional: why not add a vegetable stock cube to the rice to give it some flavour?) Once the rice is being heated (on a medium low heat) , I use a steamer to cook the broccoli directly over the rice. If you don't have one just boil the veggies in a separate pan.

3. Add the sausages to the hot oil and stir both sausages and rice occasionally to prevent sticking and burning.

4. Once the sausages are nicely browned, I like to take them out of the pan onto some kitchen roll to soak up excess oil. I also give the inside of the pan itself a little wipe to get rid of any oiliness. I then return the sausages to the pan and add the sauce, stirring it in well. I will leave the pan without heat for a few minutes, so the rice has time to catch up :)

5. Keep checking and stirring the rice. If you don't it's likely to stick to the pan. Once there is only a small amount of water left, you can then return the curry sauce with sausages in to a low heat, and strain and add in your veggies. Make sure you stir them well so that the veggies are coated with sauce.

6. Once the sauce is being heated up put the Naan breads into the oven. They only take a couple of minutes or so to heat up. Keep stirring your sauce and your rice (Tiny tip: if your rice has cooked through and there is no water left at this pint then simply turn off the heat, give it a good stir and put a lid on the pan. It will stay hot whilst everything else catches up!) .
7. When there is virtually no water left in your rice pan all will be done!! Spoon out the rice onto your plates, add your naan breads from the oven and pour over your sauce. TA-DA!!

I hope you enjoyed this little recipe idea - maybe it might encourage you to try a bit of curry. The trickiest thing about this kind of thing for a newbie chef is the timing of everything and getting it all to be ready at the same time. I hope that my setting it out so clearly for you has at least made that part of it a little easier. We love to have curry on a Friday night. Yum!
